CHEF DE PARTIE (october 2020)

We have a fantastic and rare opportunity to join our highly skilled Kitchen Brigade, preparing menus for our fine dining A La Carte restaurant and less formal Brasserie. You will be responsible for the preparation and running of your own section as well as assiting our Head and Sous Chefs with other sections and service.

40 hours per week, straight and split shifts including weekends

Lakes Restaurant is classical in design and our menus are prepared entirely from fresh, local produce and range from fine dining to the less formal Brasserie menu options. You will also be involved in preparation for the many functions, weddings and special events we host at the hotel as well as complying with all of the relevant Haccp and Food Hygeine regulations

Main responsibilities & duties

As a Chef de Partie  you will be a key cog in the team in all aspects of the day-to-day operations of the kitchen, including A la Carte, Lunch and Function food preparation, cleaning and stock management. The key duties of the role will be as follows:

  • Ensuring that all service within the kitchen is performed to the standards set by kitchen management
  • Ensuring that all food production is delivered to a high level
  • Assisting the team in ensuring that all deliveries and paperwork is completed on a daily basis
  • Demonstrating and practicing high standards of hygiene and safety in the kitchen
  • Monitoring wastage and spoilage of resources.
  • Ensuring that food waste does not exceed expected levels
  • Maintaining all equipment within the catering operation through due care and diligence HACCP awareness 
  • Opening checks (checking that all ingredients fit the hotel’s standards and Food Safety regulations, checking the cleanliness of the kitchen and that equipment is in working order for the service)
  • Daily management and closing checks (labelling, station cleaning and ordering)

What we are looking for:

We want an energetic and flexible Chef with a passion for quality food with the following profile:

  • Available for 5 days out of 7 per week including weekends, with flexibility to cover additional shifts at busy times
  • At least two years’ experience in a Chef position with an excellent standard of cooking skills
  • Very strong communication skills with front and back of house
  • Experience with fast-paced service, high level homemade and freshly prepared kitchen environment.
  • Good understanding of dietaries and allergens
  • Ability to work under pressure
  • Demonstrating organisational flair
  • Interviews to be held for immediate start
  • Full Time
  • £20000 - 220000 per annum
